Ingredients
1 tbsp coconut oil
200g cottage cheese
1 cup oats
3 eggs
1 tbsp chia seeds
1 pinch cinnamon
1 pinch salt
Topping
½ cup cottage cheese
1 tbsp maple flavoured syrup with monk fruit sweetener
1 mango, sliced
1 banana, sliced
¼ cup pecans
1 tbsp coconut flakes
1 sprig fresh mint, leaves picked
Method
Blend cottage cheese, oats, eggs, salt, chia seeds and cinnamon.
Fry 1 scoop of batter in a coconut oiled non-stick pan on low to medium heat.
Flip with a spatula once bubbles start to appear and cook until both sides are golden brown.
Add toppings of choice.
