Ingredients
For the cashew cream
200 g cashew nuts
1 fresh onion
2 tablespoon(s) of cider vinegar
10 sprigs of chives
Preparation
1. Prepare the cashew cream: soak the cashews overnight in cold water.
2. The next day, drain them, mix them with the onion and its stem, the cider vinegar and the rinsed and chopped chives. Season with salt and pepper and set aside in a jar.
3. Wash fruits and tomatoes, dry them.
4. Cut the fruit into pieces and the tomatoes into slices, and put everything in a large salad bowl with the cheese cut into pieces and the 2 fresh onions, peeled and thinly sliced.
5. Sprinkle with gomasio, salt and pepper.
6. In a jar, mix the olive oil with the grapefruit juice, salt, pepper and honey.
7. Serve the salad with this vinaigrette and the mixed cashews.
