HALLOWEEN - Donut eyes

Chef George Tsoulis Halloween snacks that you will love.




INGREDIENTS


For the donuts dough:

  • 500 gr. all-purpose flour

  • 80gr. granulated sugar

  • 250 ml sour milk

  • 50 ml olive oil

  • 4 gr. yeast, dry

  • 1/2 tbsp. salt

  • ¼ tsp. gum

  • ¼ tsp. mahalepi (not shredded) - Mahleb or Mahalepi is an aromatic spice made from the seeds of a species of cherry

  • 1 egg, medium

  • zest of one orange


For frying:

  • sunflower oil


For the icing:

  • 300 gr. powdered sugar (icing sugar)

  • 80 ml milk or water

  • 1 tbsp. vanilla extract

  • red confectionery colour


For serving:

  • candies



PREPARATION & EXECUTION


1 Pour the sugar, the mastic, and the mahalepi in the mixer and beat them, until they dissolve completely and become powder. Transfer the sugar mixture to a large bowl and add the sour milk, olive oil and yeast. Stir and set aside for 5 minutes.


2 Add the flour, salt and orange zest to the bowl of the mixer. Mix with a spoon and pour in the yeast-sugar mixture.


3 Knead with the hook on medium to high speed for about 4 minutes. Then add the egg and continue kneading for another 6 minutes or so. Once the dough is ready, transfer it to a large oiled bowl, cover it with cling film (cling wrap) and leave it to rise for 1.5-2 hours.


4 When the dough is puffed, transfer it to a floured surface and with the help of a rolling pin open it in a rectangular shape 37x30 cm. Take a glass and cut the dough into circles with a diameter of 7 cm and with the help of a lid from a bottle of water create holes in the center of each circle.


5 Transfer the dough to an oven tray lined in bake paper, cover with cling film (cling wrap) and let them rest for 30 minutes to 1 hour.


6 Place a pan over medium to high heat and fill it with sunflower oil up to just above the middle. Fry the donuts in portions for 10-12 minutes, turning them at regular intervals, until they turn golden on both sides and have been cooked all the way in. Each donut we prepare, we transfer it to a pan in which we have coated an absorbent paper to drain. Once everything is ready, let it cool completely.


7 For the icing: Pour all the ingredients for the icing, except the red colour, in a bowl and mix them with a spoon until the mixture is blended well.


8 Remove a little of the mixture in a small bowl and add the red confectionery colour. Mix with a spoon and put it in a pastry bag (piping bag).


9 Serve the donuts with white icing on top, create the designs from the eyes with the red colour and put candies in the middle.
