Chef George Tsoulis Halloween snacks that you will love.
INGREDIENTS
12 souvlaki pita bread
200 gr. mayonnaise with truffle
300 gr. cheddar cheese, grated
1 large onion, cut into vertical slices
¼ bunch of parsley, finely chopped
24 pcs. black olives, slices of
12 cherry tomatoes, cut in half
For the beef:
olive oil
1 kg beef Noua, prepped (Noua is a lean piece of meat located on the inside of the calf's thigh)
1 onion, finely chopped
1 clove garlic, finely chopped
2 tbsp. tomato paste
100 ml red wine
1 litre of vegetable broth
500 gr. crushed tomato
1 cinnamon stick
2 bay leaves
2 spice grains
2 tbsp. honey
salt
pepper
PREPARATION & EXECUTION
1 Pour in a wide saucepan olive oil, place it on high heat, and put the meat in it and sauté it for 2 to 3 minutes on each side until it gets a nice colour.
2 Add the onion, garlic and sauté for another 3 to 4 minutes.
3 Add the tomato paste, stir, quench with red wine and let the alcohol evaporate.
4 Add the vegetable broth, the crushed tomato, the cinnamon stick, the bay leaves, the two spice grains, salt, pepper and cook for 1.5 to 2 hours. The last 5 minutes we add the honey.
5 We separate our meat into pieces with a fork and leave it aside.
6 We take the pita bread and using a cake pan measuring 10 cm, we cut them in half and bake them in a non-stick pan without olive oil, until they get a nice colour.
7 Once cooked, we layer the pita bread - put a little mayonnaise on the base, then add the beef on top, then a little onion and parsley, and the add a little grated cheddar cheese to top.
8 Close the pita bread like tacos or put it in a tacos pan.
9 The final touches; on top of the cheddar, with a teaspoon, pour a little mayonnaise in the center to form 2 eyes, and just above the mayonnaise add 2 slices of olives to look like eyes and half a cherry tomato under the eyes to look like a nose.
10 We serve.
