Mango bliss balls


Ingredients

  • 120g dried mango (no sugar added)

  • 150g natural cashew nuts

  • 40g coconut (unsweetened finely shredded) and extra for rolling

  • 1/2 tsp tumeric

  • 1 lime, zest

  • honey or maple syrup (optional)








Instructions


1. Soak the cashews in hot water and the mango in room temperature water for 30 minutes. Drain and rinse.


2. Add all the ingredients to a food processor and mix until it forms a dough. I like to leave small pieces of mango and cashew for the texture.


3. Roll into balls and coat with coconut. Store in an airtight container in the fridge for a week.
