Ingredients
4 slices of organic smoked salmon
60 g of fresh square cheese
5 stalks of chives
1 not too ripe mango
1 kiwi
60 g of arugula
1 tablespoon(s) of balsamic vinegar
1 tablespoon of olive oil
Preparation
1. Mash the fresh square cheese in a small bowl, add the chopped chives and pepper. Reserve in the fridge.
2. Peel the mango and the kiwi. Cut them into small cubes. Add to the cream cheese 2 tbsp. diced mango sponged in foil.
3. Mix gently.
4. Garnish the smoked salmon slices with this preparation and roll them into a cone shape.
5. Arrange them on plates, add arugula leaves, the rest of the diced mango and the diced kiwi.
6. Season very lightly with balsamic vinegar and olive oil. Serve chilled.
