Ingredients
1 pineapple
1 teaspoon of salt
2 tablespoon (s) of brown sugar
1 teaspoon of chilli powder (eg espelette)
whipped cream
20 cl of very cold liquid cream
2 tablespoon (s) coffee sugar ice
1 teaspoon of white rum
1 vanilla extract
Method
1. Prepare the whipped cream. Whip the cream until it is firm.
2. Gently fold in the icing sugar, rum and vanilla extract. Keep this whipped cream in the fridge.
3. Cut the pineapple into 4 quarters.
4. Combine the salt, sugar and chilli, then sprinkle with the pineapple quarters.
5. Place them on a grid, 9 cm above the embers.
6. Cook them for about 10 minutes, turning them several times, until they caramelize and start smelling divinely.
7. Enjoy the fragrant flesh of the pineapple, leaving the hard part. Serve it with rum whipped cream.
