Spinach and feta pasta



Ingredients

  • 1 onion

  • 3 spring onions

  • 1 clove(s) of garlic

  • 3 tablespoon(s) olive oil

  • 1/2 bunch dill

  • 500 g spinach

  • salt

  • 150 g cream cheese

  • 300 g feta cheese

  • 400 g spaghetti, spinach


To serve

  • dill

  • olive oil



Method


  • Place a frying pan over high heat and add the olive oil.

  • Finely chop the onion, the spring onions and the garlic, and add them to the pan. Sauté for 2-3 minutes.

  • Finely chop the dill and add ¾ of it into the pan. Set the rest of it aside to serve.

  • Add the spinach cut into pieces, salt, and sauté for 4-5 minutes until the spinach is tender and wilted.

  • At the same time, in a pot with boiling water add some salt, the pasta, and boil according to the packet’s instructions.

  • Add the cream cheese into the pan, along with 1-2 ladlefuls of the water where the pasta is boiling, and simmer for 2-3 minutes.

  • Add the feta into pieces and mix.

  • Drain the pasta and add it into the pan. Mix and remove from the heat.

  • Serve with dill and olive oil.
